1992 cherokee shutdown

If it does this every time, a guess would be that by removing the fuse, you are allowing something to reset such as a relay.
Are you saying that every time this happens, no matter how hot engine is, it will restart immediately as soon as you unplug and replug the fuse? Do you know for sure whether it will eventually restart after the engine (and under hood) cools without having unplugged the fuse? I would try this at home if no one comes up with a better idea.

Mostly just another piece of the puzzle.
The central 60 amp fuse (#6) controls the ASD (automatic shut down) relay and the fuel pump relay. I would swap out those relays and see if it makes a difference. If you don't have spare relays, you could swap with the e-fan relay A (1st relay in the PDC) (watch your temps) and the A/C relay D.
Maybe someone else will have other ideas.
Let us know what you find.
Edit: It sounds like you already know this, but the #1 and #9 60 amp fuses are for the alternator output
