I would replace the carpets with brand new for $300.
Huge upgrade for the interior and might solve the smell issue.

The only thing I have ever had luck with is covering it up with like 15$ of little trees I even tried the coffee thing in my old truck to no avail

Hydrogen peroxide might work too as it does what bleach does without as much damage possibilities.

Also baking soda works, you can buy the packages made to put in freezers.

I got a smell in my xj also, even though it's from when I carried 500lbs+ of mulch bags in it.
I think I might try the coffee grounds one day, and report back. Better tempt solution than the permanent one of pulling the carpet up.
