Bumper hitch towing capacity

Then I would need to use it to tow TWO vehicles back, since I'm driving one I already own over there.
To avoid further spitballing without all the info, here's the situation:
I will be driving my vehicle to another state for corporate training. I have been looking for an MJ, and it just so happens that there's one there that may be a good deal. We are specifically not allowed to rent vehicles for this trip on the company dime. I could fly, but then I would be trapped at the conference center with 60 accountants throughout the entire week. Not only would that be horrible, I would have to arrange a cab to go look at the vehicle in question and ask the driver to wait while I test drove it. So not really an option.
I have two vehicles I can drive over. I can drive my little Subaru, or I can drive my XJ. The XJ has the towing package and could tow the MJ, but I don't want to drive it that far because it has had some recent issues that make me a little nervous about it. So it's preferable that I drive the Subaru. The only one of my colleagues who could potentially drive one of the vehicles back for me can't drive a stick, and I really don't want him learning how on my Subaru.
So my options as I see them:
I could rent a car on my own dime, but then that would be considerable wasted money if I ended up not buying the MJ. I'm not doing that.
I could take the XJ and risk having to leave it on the side of the road somewhere.
I could teach my colleague how to drive a stick and trust him to make the trip back in one of the vehicles without tearing it up.
I could buy the MJ, leave it there and fly back a few weeks later to pick it up. This may end up being my solution, but taking the extra time off work and/or my weekend class will be a hardship, not to mention the cost of a flight and a cab ride from the airport.
Or I could drive the Subaru and tow it back with the MJ. The Subaru is 2700 lbs. The last time I rented a Uhaul two-wheel car dolly, it was light enough for me to slide around by myself to line it up, so it can't possibly weight 800 lbs. A 3500 lb capacity seems like it could work, assuming that I don't crawl underneath the MJ and see a lot of rust.
I thought I might be able to have Uhaul install a hitch, but their idiotic hitch tool on the website says that I would have to take the truck to Arizona to have them fabricate one. WTF?
So there you have it. As far as I can see, it's either tow it with the bumper, or leave the truck there and fly back, in which case it probably wouldn't be worth it.
