the best explanation I read was the thermodynamics of a fluid cooled heat exchange is much better at dealing with especially transient temp spikes than air-cooled (in hot ambient)
(this was in response to questions with RHD drive radiators "cooling" the trans fluid on the hot side of the radiator @ ~ 200F)

In addition of course they serve to warm the fluid faster when ambient is cold
