So my jeep has been wandering a ton lately, but yesterday I decided to lower my steering wheel position and it seems that the car is driving better. Does anyone know if the position of the wheel impacts the feel of the car that much or was it all in my head? Thanks.

Something has gone wrong.
get someone to turn the steering wheel back and forth as you examine the motion of the steering parts. (do this with wheels on ground, not jacked up) look at all the rods, drag link, etc... check where they are mounted for bolts that may appear to move (loose bolts) as steering turned, look at the steering gear box, make sure it aint moving from being loose on the frame, make sure there is not excess play in steering shaft input to the gear box verses the movement of the output (pitman arm),
It does not take much movement of loose parts to cause excess wandering.
Let us know what you find!
good luck
