I suggest you wire it up like the stock or through some kind of temperature sensor. Winter is comming and it still gets cold in Texas as I recall.
If you wire it up to the ignition, you will be wasting gas and putting more wear on your engine.
The fan will pull power all the time putting more load on your alternator/engine.
It will also take longer to reach proper operating temperature, so you will run longer with wider clearances (accelerated wear of bearings) and the ECU will send additional gas to the injectors for a longer time because the engine is cold.
If you want to wire in an override switch so you know it runs when you want it to, then do that.

i really dont recommend you take out the mecanical fan ,i already did and its a huge headache, at least for me, i have dual electric fans and there is always a mess up, when is not the relay that burns is a wire that melts , if not that is that the fan gets damaged , the other day was the fan blades that broke on center bolt , and after replace , then they started rubbing , i took them off , put them back again and after few hours on street the rubbing again and have to stop on some street to get dirty to settle them again somehow until get home , hate them i swear i do but cant get fan clutch again , so thats my personal experience....

I run a high speed fan and the stock mechanical. I aways figured if the alternator ever took a dump I'd still have the other to get me someplace safe for a short period.
