I know alot of folks suggest increasing 1.25" wheel spacers, different backspacing or LCAs to prevent rubbing at full lock with 31s on a 3" lift. I noticed a little. The other option is limiting the steering with stops.
Not sure how this applies to your 2.5" lift but, I decided to go with the spacers as the easiest, cheapest option to retain all range of motion. Even with the spacers, my tires poke out from underneath the stock flares less than inch. I had already trimmed the front corners of the fenders behind the bumper.

Just a thought, but from my own experience...
I used to run BFG AT KOs on my '02 TJ all teh time; went through 4 sets. They're great off road tires that behave well on road as well. But, they are pricey, and they have a bad tendency to float and hydroplane in relatively shallow water on roads.
When I bought my XJ, I decided to try the Firestone Destination ATs. Cheaper than the BFGs, quiet on road, and MUCH better about hydroplaning. For a daily driver, especially if you have other mud tires to swap when needed, I'd give the Destinations a good recommendation. I have about 8000 miles on mine so far and have no complaints. I caught a sale and I got mine mounted, balanced, tax and all for just a hair over $600 for the set. Your 31's will be a bit more than my 235/75-15s, but should still come in less than the BFGs.

measure from anywhere outside the tire a half inch bigger (going from a 30 to a 31 is an inch overall or a half inch from say the centerline if you were to cut the tire exactly in half)

Do not waste your time/money on the SR-A's they are crap. One of the tires I was looking into before I got my MTR-K's were the Falken Wild Peak/Rocky Mountain ATS. They are on the lower price end, and are nice tires. Something to think about though. GY usually has rebates, and if you become a member of treadlightly,org you get an additional 100$ off a set of 4 GY tires, the Silent Armor, Duratrac, and the MTR-K.
The General Grabber AT2 is a great alternative to the POS BFG KO's as well.
