Backspacing, what is too much/little?
Is there such a thing as too much/not enough backspacing?
I'm looking at getting some soft 8's with 2.5" BS and was wondering if there is anything I need to take into consideration before doing this?

Nothing really. I know the stocks are 5.25" and rub on LCAs at full lock, so i'd say that's too much backspacing. 2.5" will give you a nice stance, but i've never heard of any downsides to having BS that low

Right now I'm running some (unknown brand) soft 8's with I think (not sure, PO told me and I haven't measured) 4.5" BS but then I put 2" spacers on as well. This would eliminate my spacers and give me the same stance, but I think I want to keep the spacers and get the 2.5" BS soft 8's.

^x2 on the wheel bearings.
Wheels size and width along with back spacing all have to do with what size tire you are going to run. More information about what you intend on doing as far as lift and tire size will help get a more informed answer.

I'm planning to keep the lift at 3.5 and run 33x12.5, and then eventually bring it up to a 4.5-5.5" LA lift in about a year to a year and a half.
