So I heard it's ok to put 33 x 12.5s on 8 wide wheels.

Are there any drawbacks?

Thousands of Jeepers running just that.. you'll be fine.

A 10" wide wheel would be too wide, and technically a 7" wheel would be a bit narrow.

I ran them on a 7 and it was OK tried a 10 and broke beads now I run 8s and love them.
