Default how cold engine before drain and flush?

I will rinse and flush my system (again) and change my waterpump (since its at 110 celcsius all the time), its my last shot to se if i could fix the "problem". On the bottle it says that i should drain then fill water and fluid (rinse fluid) and then run it for 30 min, then wait until the engine is cold before drain and flush. But how cold must it be before flush? Could i damage the engine if i drain it when its hot, what about cold water in hot engine, would that do anything bad? Is waiting 30 min after shut down the engine long enough?

Ever had an anti freeze burn, its a lot like napalm!
Engine should be cool enough that you can easily work on it. Best guess is 100F.

I dont think that I would put sub 50F water in a block that has just run at 210f, but I dont think it would hurt it. I have tapped the bottom of the hot water heater, which was 120f and flushed a 220f engine. Out of the frying pan and in to the fire?
