like the others said, disabling the ABS is as easy as pulling a fuse (and having ABS from the factory may result in lower insurance rates - whether you disable it or not).

Airbags should be a non-issue offroad, and for the same reason as above, you should not intentionally avoid them, especially considering the safety aspects of having airbags in a street driven vehicle.

Year shouldn't matter much to the insurance company other than older = cheaper. All years are essentially the same - options (airbags, abs, etc) are where discounts will apply (or not)). Call them and talk to them about it.

Are these like additives? Or just different brands of fluids?

Brands of fluids. Example Redline D4 ATF works in both Auto and Manual Just takes more for an auto. The MTL however is just for manual.
