Yea but if your going through the trouble of doing a v8 engine swap why not just put something that has been widely used and swapped?
Unless u just want to drop in a carburetor motor then that wouldn't make sense to me fuel injection is usually better.

Electric fans and a good radiator should solve that
U can put 3 10" electric fans on one side pulling air and 1 12" fan pushing air if needed

Im running a 3core aluminum and a hi flow t-stat housing. Almost works too good... mostly im worried about mating the electrical systems. Ill probably do a custom dash with autometer guages.
