There's always the gumbo roads west of Hallock. Right in the flood zone! To the EAST there are the ditch roads that drift over in the winter. There's nothing too spectacular.
As far as in ND, I'm not sure.

Saturday is national Go Topless Day! I'd bring my TJ up there for topless open wheeling if i lived closer. I usually will plan 3-4 days at a time in northern MN.
There's a new park opening up in Atwater, MN this summer. It will be a full day of wheeling followed by a concert featuring Copperhead Creek, The Plott Hounds, and headlined by The Chris Hawkey Band. August 22nd is the date. $25 covers the wheeling which starts at 8 am and goes until 4. The concert is included in the ticket price and music starts at 6 pm. Camping will be available on site for an extra $10 per person. All proceeds go to benefit the ALS Assn of Minnesota. Check out the Facebook page and the website. Front and rear lockers STRONGLY recommended with new trails being added all the time. I'm not affiliated with these guys just passing along the word.
