Assuming that you're running the feed to the multiple switches via the cat5 cable (drawing is unclear), then even if you use 2 of the 8 cores as feeds, you'll be pulling 3 coil currents down each of the two feeds.
Golden rule of electrics, always have the fuse size smaller than the cable can handle.
Cat5 cable is not suited to the job.

Design wise it's fine with the exception of using the CAT5 to control the relays. Just use a heavier gauge wire for that (either bundled single conductor or a multi-wire cable). I'd use 18 gauge. The higher the strand count, the softer and more flexible it'll be.
