I have just a bit less than a 1/4 tank on the gauge and the little amber 'empty' light comes on . . . is this normal? does it actually go empty when the needle reaches the E or is there a gallon or two after the gauge hits E?
my previous car had about 2 gallons past E so I never drove until the tank was dry
just want to make sure I don't get stranded in my jeep!

From the moment my gas light comes on I have about 2 miles to find a gas station or I'll be stranded.... Bad thing is it comes on at about 1/8th tank... it will never read empty...
it depends on each vehicle, the level sensor will read different on everyones vehicle, so what you can do to know for sure is have a couple gallons of gas and see how far you can go.
mine when it get to 1/4 of tank, and I accelerated from a stop, it comes on, then it turns of.. remember the gas is moving in the tank, but dont let your gas tank get so empty,, I try to keep mine at half a tank then refill always..
