I thought about using some spacers for when I get 31" but I have hered mixed things about them.
You might look into new lower control arms. Rusty's make custom lower control arms for the Cherokees that are bent to allow bigger tires and prevent rubbing.

stock rims are relatively narrow.
10.50 can fit on a stock rim (8") but I would not go wider than that.
At 12.50, you should be looking for wider rims.
Backspacing: Stock have roughly 5.75" B/S.
If you slap on a 12.50 tire...you probably would only get it bolted on.
It would rub on every component of the suspension.
Final word: You WANT 12.50 wide, get wider rim with less backspacing.

^I wouldnt either, but if I recall someone on here has it set up like that and they rub very little. Of course I may be wrong, but they might chime in.
