My 99 used to overheat in summer when ambient temp hit 85+ in stop and go traffic. You should be concerned at 250 as this is the "redline" for engine damage (by the gauge marking anyway). You should stop doing whatever it is you are doing, pulling in your case, and let the engine idle until cooled. Don't shut the engine off in this case as the fan will cool the engine quicker than if you turn the engine off. At least this is what I did to cool mine when it got that hot.
Incidently, My overheating in summer problem was solved when my wife hit a deer. I decided to only replace the radiater but not the A/C (we had moved to a cooler part of the state). This allowed the air to hit the radiater directly and now I run at about 200 with no more overheating problems when it is hot outside.
If your engine is getting that hot pulling, I wonder what you might also be overheating in the process? There is a reason they sold the "tow package" with these. Seems odd that it would get so hot just pulling someone out though.

Mien was running around 230. I did a coolant flush and replaced the hoses which dropped it down to around 210. I then repalced the t-stat and water pump and it is lucky to hit 190 now. Takes a long time to heat up this time of year. But its nice not havign to worry about if its going to over heat when I am in the woods being hard on it.
