Default Tranny cooler

Yup, another transmission cooler question. So I did a search and found that running both a cooler and through the radiator is best because the radiator helps warm the transmission up. My impression has always been the colder the better but apparently not. Why?

I work at a performance shop and can get parts at cost so I was going to service the old Aisin Warner and install a cooler while I was at it. The parts would be from advanced. Any suggestions? Also I was wanting to get a temp gauge from them as well...
