Default Stalling Issue

I have a 2001 Jeep Cherokee XJ that keeps randomly stalling on me. I haven’t had it too long and the problem started after I changed the fuel pump (though it’s worth mentioning I did this pretty much right after getting the car). I’ve checked most everything related to the fuel system before taking it to the mechanic and they said it’s an electrical issue. I changed the alternator and the battery multiple times and it’s still happening. I’ve been monitoring the voltage and there does seem to be a parasitic drain of some sort as well as the alternator not charging it enough while the engine is running (around 11-12V depending on what features are being used). There’s no warning or check engine light when it happens. Sometimes it comes back on immediately and other times it takes 5+ minutes of cranking. I really don’t know much about electrical things so I’d appreciate some advice!

Even though it's not kicking a check engine light on when it happens, are there any stored check engine codes when you scan it?

When it does cut out next and your fighting it for long duration, figure out what is missing from the magic equation - fuel, air and spark. Obviously you'll have air but what is cutting out - fuel/spark?

When it's only cranking do you hear the fuel pump running or does the fuel pump prime at the initial key on cycle?

I can't think of a simple way to check for spark with your coil/plug setup atm im sry. Drawing a blank on that one hmm.

But there are some simple things to also do like going over all the grounds in your engine bay. Unbolt them and clean up the wire terminals and gorunding points. While it is running you can wiggle and agitate the wiring looms around your alternator, coil pickup and fuel rail to see if you trigger a fray/split wire.

I was able to temporarily solve the problem by charging my battery every night and I didn’t have any issues while doing that. I took a look at my grounds and found a little red and green wire attached to one of them that led to nothing (the previous owner, it seems, did a few alterations). I took that off and haven’t had a stalling issue since! But of course immediately after that, coolant started leaking out of the radiator cap. I think the radiator is clogged so I’m attempting a flush. Thank you for your suggestions!
