The picture of the gauge reading at 210 is fine. That is not running hot. if that gauge gets up to the max and the temp readings with the IR gun are in the normal range you might just need a new sensor.

At this same temp via the in dash gauge it reads on my temp gun 208 on the upper radiator hose and the hottest place on the block was 205. Is the gauge just crap?
Most factory gauges by law can be off 20%,And with the jeeps age the temperature sending unit could be reading off also.Tell it starts to act like its over heating or the gauge is pegged out your fine.

the sender is really bad design, sometimes have to buy 2-3 before you get one that agrees with the IR gun. Might also have an air pocket in the rear of the head, that will cause problem readings--you can eliminate that by putting a 1/8" hole in the thermostat at 12 oclock position to help it bleed, should not be necessary but can be helpful sometimes. You can also verify against the temperature sensor reading with a scanner, if you can find somebody that has one.
