I heard a story of a guy hooking a bicycle gear shifter up to the throttle body in order to keep steady RPMs when rock crawling.. Is this possible, if so how would it be done?
Exactly. Or you can get the parts yourself to get just what you want - make sure to use bead chain for the last 4" or so of the control cable (cut the cable and crimp on a bead chain sleeve. You need that last bit to be flexible so you don't bind up the throttle linkage from the pedal.)
