Need help figuring a part out. PLEASE.
Behind my oil plug there is something with a cover on it but its broke and I dont know what it is.

That is the inspection cover for the flexplate. It needs to be there to prevent road debris from damaging the flexplate or torque convertor. However that is not enough of a hole to be worried about.

Is there anything I can do to cover it up without having to replace the whole cover? Maybe a patch or something of that sort.

Thank you very much, I like to take time after I go wheelin to clean nearly every square inch of the underneath of the Jeep. The body wise can have mud on it but underneath there wont be. Any time I am under my Jeep I like to inspect all what I can to check for excessive wear and damages. LETS JUST SAY, I BABY MY JEEP.

Yes you can take a peice of metal and drill hole in it and bolt it to the big bolt... and cover hole... now... its really not worth messing with.. honestly...unless you go threw say woods alot with small branches.

Do I have to drop my Tranny out to replace this FlexPlate or can I drop my Oil Pan and then replace the FlexPlate that way.

That is not the flexplate, it is the inspection cover for the flexplate. You do not have to drop the trans or the oil pan to replace it. Just remove the bolts that hold it in and it will drop straight down.
