Default in need of engine reassembly help

So I just rebuilt my 98 XJ 4.0, and I need some guidance on the best/easiest way to put it back in. I hoisted the block out after I had the manifolds and head out. Should I attach the head and manifolds to the block before I mount the engine. I was worried if I did, that I would make those E12 a PITA to get to. And if I leave the head/manifolds off, it will be a PITA to bolt the manifolds on.
What do you all do? And if I do assemble everything prior to mounting, what should I hook my chains to, head bolts? Any experienced knowledge? Thanks for reading.

Replace the E12 's with some 3/8"-16 Bolts.

Put the head on before putting the engine back in.
