Interesting A/C issue...

As I said - the purpose of he aux fan is to keep the engine cool. It's not there to make the AC work.
Using the AC activates the fan so the engine stays cooler.
Thinking about your statements - head pressure, cycling, etc - I realized you must have missed the entire concept of evaporator icing.
You are thinking the icing I'm referring to - and the capillary tube controls - are to stop internal icing INSIDE the evaporator. Moisture INSIDE CAN cause ice to form, blocking the coolant flow and driving pressure up. That would cause the HI switch to shut off the compressor till the pressure drops. Compressor would cycle on and off, -- when off the pressure drops till the switch closes again, then the pressure goes back up and shuts off again.
The evaporator's thermostat is not there for that.
If the evaporator gets too cold, ice forms on the OUTSIDE of the evaporator, BLOCKING cabin airflow. Ice on the outside does not appreciably change the system coolant pressure, so "head pressure" is not affected. Compressor keeps on running fine as normal, but cabin air does not get cooled properly - the OP's complaint.
The copper sense line senses if and when the evaporator is getting close to 32 degrees and in danger of icing - ON THE OUTSIDE.
2 types used in these JEEPS - the XJ type open the expansion valve slightly, thereby reducing the expansion of gasses, stopping some of the cooling effect. It does not cycle the compressor - no electrical contacts.
The other type as used on the YJ simply is an electrical switch that shuts down the compressor momentarily, lowering the cooling effect.
Either type stops the evaporator from getting too cold - just different ways to do it.
Someone posted a photo of theirs - it showed the passenger end - the capillary tube goes in the left side of the evap housing. Often what happens when the assembly is pulled out like that the tube slips out, then when re-assembling the tube gets trapped between the housing and the firewall - not where it's supposed to be. Or at least it gets pulled out of position where it's not as effective. It's not an uncommon problem.
To see the tube - look near the dryer - it often is covered with the rubber dum dum making it harder to see. Look for the round diaphragm where the tube goes into it (refer to the picture of it). Trace it down and through the firewall to the evaporator. It goes through a hole into the evap core.

I did work as a "mechanic per se" for a short time. But from there I bought the shop, then 2 more shops. I HIRED and TRAINED mechanics. But in order to train them, you have to know what you are doing yourself.
But I consider myself more of a businessman - I've owned 17 different businesses. I'd buy distressed businesses, fix them, then sell them for a nice profit. Everything from flower shops to print shops, to a Formula 1 chassis mfgr.
My auto shops - first one was general auto repair (alignment, AC, smog, tune etc) next one was a dyno-tune performance shop, then the last, and favorite was a specialty high performance dyno shop dealing only with very high performance stuff, race cars etc.
Now retired - I play the stock market and buy and sell shopping centers, malls, and a few houses. I should not have wasted my time doing other things first.

1: 97 and up xjs do not use an adjustable metering device, thereby there is no capillary tube(as i mentionedi had my evap coil out no cap tube or sensors attached to it)
2:you persist in mentioning an evap stat that controls the compressor and monitors evap temp to [prevent icing, nope no such animal
3: i dont care what jeep used on any of there other models i am only speaking of post 97 model years cherokees
4 i am not referring to internal icing but external
5 currently an over the road truck driver (youre welcome, if you bought it we brought it)
