How hot is too hot?

How hot is too hot?
For the 4.0L that is. Having a 2000 with a cylinder head prone to cracking I was just curious....how far past the 210 mark before someone should worry? For the most the Jeep runs right at 210 but the last couple hot days it has ticked just over 210 until the electric fan kicks back on and drops the temps to normal.
Anyways...just curious. Any input is appreciated.
