It completes the electrical circuit, basically allows the electricity to flow back to the power source. It's like in racing... eventually you have to turn around and head back to where you started.
It is also important for houses, power/telephone poles, generators, etc.. gives electricity a clean easy path to the ground rather than through your house.. or through you.

Whatever type of electrical circuit you have is not going to do anything unless it has a good clean tightly connected ground. VERY IMPORTANT grounds are.
