Exhuast Manifold/ engine question

Exhuast Manifold/ engine question
2000 cherokee, 4.0 / I-6. 136,000 miles
I took my intake and exhuast manifolds off, I noticed some "water" coming out of the opening where the exhuast manifold was. It's winter here and the jeep was outside (hood closed) but I now have it in a unheated garage to pull the engine (threw rod I believe on new years eve). I dont believe the water is from condensation. I have drained the oil and I didnt see any evidence of water in the oil.
Any one have an idea why I might have water coming out of the exhuast manifold opening? I'm replaceing the engine any how (might be a stroker project depending on the damage) but I would like to know.
