Yes you can do it. It would take you measuring and making a design, then a welder and some 1/4" plate, and a drill/drillpress.

You don't have to use bushings, you could weld a sleeve for the bolt. Or you can buy a set of greasable bushings and use those.

The easy way is to just extend what you have and brace the extension. Lots less effort and metal involved. And it will already have a bushing in it you don't have to remove if you don't get it too hot.
