I just got a 2000 jeep Cherokee and was wondering what would be a good stereo and toucg screen

Anything is better than what comes stock. As of right now, you're only able to do a single-DIN aftermarket radio, which means you won't be able to do a touchscreen, at least not easily. XJ owners HAVE done touchscreen double-DIN units in their Jeeps, but it requires dash modifications, and you likely won't be able to reinstall the factory radio once you install the aftermarket radio. I've had both Sony and Kenwood units in my Grand Cherokees, and they've been great. Go with brand name if you can, as lower-end stuff (BOSS, Dual, Axxera, etc.) aren't as good sound-quality, interface, and reliability wise. You'll only need the dash kit and wiring harnesses from either Metra or Scosche for the upgrade (both cost less than $20 together), although you will need to crimp the factory grounding wire to the aftermarket radio's grounding connection using a spade, as no grounding connection is provided in the wiring harness. But you won't need to cut into the factoy harnesses in the case that you wish to ever reinstall your factory radio. Crutchfield will provide you the wiring harnesses and dash kit for FREE when you order your new radio from them, and their customer service is great. :)

To access the factory radio, all you have to do is pull out on the center console bezel and remove two (2) bolts in the upper right-hand and lower left-hand corners of the radio. Then, just unplug your factory wiring harness and A/M-F/M antenna and take the factory radio out from the dash. The dash kit allows the aftermarket radio to line up with the factory radio's screw holes in the dash, and the wiring harnesses match color-for-color to the harness included with your new radio, and then just plug right into the factory wiring harnesses coming from the dash. The factory A/M-F/M antenna just plugs right into your aftermarket radio. :)
