I guess I will be the one to ask..

Why would you buy a Cherokee and wanna make it a strip/drag vehicle??

But, if you're Hell-bent on doing it, then I would suggest hitting up FrankZ about his Chevy V-8 conversion. 300+ horsepower. Besides, based on what he's said and what I've seen, strokers can be a PITA to deal with and are not all that realiable.
