How hard is it to cut fenders on an XJ ?

Easier than searching how to do it.

Really tough. Especially if your just trying to judo chop them off.

Hand will bleed f done wrong.

Its not that hard if you have an angle grinder. Do some searching around. Theres a few write ups. Just cut the front and cut and fold the rear. Take your time and you can make it look clean.

Yeah angle grinder with a cutoff wheel made it simple. Here is a link I used to cut mine and they turned out nice. I added some door trim around the edges to protect it a little too.

Plasma

I used a jig saw with a fine toothed blade. Worked great!
