Is that not how the high flow is supposed work. Because I let it idle up to 195 and drove it for maybe a mile and was getting low temp.

But here's a question; being high flow meaning ( constant) the pressure from the pump opens the termastat to a certain amount allowing constant flow and only opens up all the way when reaching 195? Other wise how could my running temp be so low and climb gradually when left to idle.
It's not what it's supposed to do, but that it likely what is happening.

Bad thermostat. Water pump won't push a stat open......

Get one from the dealer. Pricey, but worth it for stable temps.

I agree about the tstat being bad. You can have the most efficient, or over-efficient cooling system in existence, but it won’t keep the engine temperature low if the tstat is functioning properly. That is, if the tstat is closed and restricting coolant circulation in the engine when the coolant is below it’s rated temperature. I find it difficult to believe even a “high flow” water pump could create enough pressure to open a properly functioning t-stat. With that kind of pressure in the system you’d likely find yourself with a lot of leaking hose connections as well.

With a good tstat your current cooling system may be overkill, but it should operate as needed.
