If you look at the table here they don't recommend 10 inch wide rims until you get to 32" tires, even then is it marginal.

I have 33x12.50s on 15x8s. The rim width corresponds to the tire width. My rims are 1/2" narrower than manufacturer's recommendations, but general consensus is they are preferred for off road purposes. When you air down, the wider tire on a narrow rim will hold a bead better. If you are installing 31x10.5s, I would suggest 15x8 rims. Then at a later date you can put some 33x12.5s on the same rims.

The next important detail on the wheels is the backspacing. I have 4" of backspacing on my wheels to keep the tires out of the LCAs.

15x8 for sure. The 8" wide wheel will be good for tires up to 12.5" wide.

Do not put 10.5 inch wide tires on 10 inch wheels. Not only does it look ridiculous but it provides no protection for the rim and the bead will come unseated much easier if your tire pressure is low.

What is the widest you would put on a stock 7" rim?

PO of my 90 had 31x10.50s on 7" wheels. Fit well.
