235/70/15 on an 8" wheel?

235/70/15 on an 8" wheel?
I have a 1999 Cherokee sport. It came with the stock 7" steel wheels. I have some 8" wheels from a TJ and put my new tires on them 235/75/15 and put them on the XJ. According to tire manufacturer, they are approved to work on up to an 8" rim and they did fit. However the guy installing them had to put in some extra work to get the bead set on the wider 8" wheel.
My main concern is airing down for when I go on the beach. I'm used to 8" wheels and 31x10.5 tires and I've aired down to 12 psi no problems with that setup on my TJ. For a test, I aired down my XJ tires (235/75/15 on 8" wheels) down to 16 psi and didn't pop a bead. So my question is, should I be looking for some new 7" wheels for these tires, or is it save to air this setup down? and how low? I usually go down to 14 psi when on beach but am afraid of popping the bead on this setup.
