Sounds like the brake booster is leaking. Disconnect & plug the hose going to it and see if the noise goes away. If it does you can drive it like that until you get it fixed, but you won't have power assist for the brakes, so the pedal will be harder to press.

If anything I would deal with the noise and not worry about disconnecting anything unless for diag purposes. The post above was talking about disconnecting the vacuum line though. That vacuum line goes to the big can (booster) that is directly behind the master cylinder at the firewall.
I would imagine you probably have a leak in the vacuum diaphragm inside the brake booster or problem in the valve that dumps vacuum when pressing the brake pedal. When you press the brake pedal a valve opens to vent vacuum off the back side of the diapragm, sometimes this makes a quick hiss or whoosh sound but the sound should go away if you stop moving the brake pedal. If the noise is continuous when holding the pedal down then the booster is bad.

Well really its just a vacuum leak while the brake pedal is pressed, unless its hissing when you let off the pedal too. The worst case is the booster will completely fail meaning you will have no power assist. I am sure at some point you have probably driven/stopped something without assist on a power brake setup. If not you better be ready to stand on the brake pedal if need be. In all actuality it probably will make it just fine, but just be careful in case you need to make a sudden stop.
