Welcome to CF. Check the universal joints in the rear drive shaft for wear/play, and have someone pull the plug or rear cover off of the rear axle to check the fluid, and for any damage to the gears/bearings. That could explain any noise/binding conditions that could cause the issues your experiencing. JMO

You probably have the Dana 35 rear axle and D30 front axle. This will show a pic of the differential covers for them. each one has a plug, either a metalone that unscrews, or a rubber one that can be popped out to check the fluid level which should be at the bottom of the hole once the inspection plug is removed. You can insert you finger and see if you can feel any fluid and then check the condition of it if so. Or you can remove the circle of bolts holding the cover on after placing a container underneath to catch the fluid that will drain out. This way you can check the condition of the pinion bearings and differential gears and bearings. Then replace the cover and install new fluid if all appears okay. JMO

BTW your jerking problem won't be solved by adding fluid.

You don't have gears in your driveshaft.
No offense but if you didn't know how to put fluid in the axle nor did you know how to get the rubber cap off, then how do you plan on being able to tell if the pinion, carrier, or axle bearings are bad?
