Default 95' v8 not reaching operating temp?

I have a 95' V8 Limited 310,000 miles. My temp gauge does not ever get to 195-220 unless I'm sitting in traffic for a while. I have flushed cooling system, and replaced thermostat. The original thermostat was broken when I pulled it out. I believe I obtained all pieces of the old one. I just purchased this Jeep, it has done this since I bought it. I plan on removing the upper radiator hose from top of radiator starting the car and seeing if fluid flow (therefor telling me the new thermostat is stuck open) would this work or is it even a good idea? My next step is to purchase a themometer to measure the heat in the engine compartment and compare it to the gauge. Any Ideas, thoughts?

You should have at least a 195 degree t-stat in that vehicle.

I replaced the water pump and thermostat on my '97 ZJ w/the 5.2L V8, and the manual calls for a 195* t-stat.
I won't run a colder one. Some do though, but I'll go by the book and what the engine controls are designed to work with.

K I checked the part number on the reciept with there computer and it is 195 thermostat.
Let's say I did install a cooler one the gauge is still reading 140-150. Even with a thermostat temp of 185, the engine would still atleast reach that temp correct?

Yes. You need to verify that temp reading. Maybe the sending unit is wrong/bad, or the gauge is incorrect.
