Is 160 thermostat too cold?

Is 160 thermostat too cold?
I just helped my roomy install a thermostat in his 96 grand cherokee. We did not realize that it was a 160 and not a standard 195 until we drove it and the temp never really made it to 160 according to the stock dash temp reading. It is coming up on winter here in lake Tahoe, so the air temp is significantly cooler. But my cherokee will still run around 200 when the ambient temp is in the teens.
We just want to know if we should switch it out with a more standard 195 thermo or will there be ill effects to other systems other than the heater not getting as hot. Mileage?
