Hmm I'm not sure about the oil pressure, mine does it too. At idle it drops.

You might have messed your alternate up with all that water yesterday.

What did quickmopar say about the knocking? I read about it, it could be a crack in the flywheel, loose torque converter bolts, or loose flex plate.

If your guages are jumping around could be a faulty ground? Or like jeep98cherokee said, all that water yesterday could've gotten in your alternator, so could be messing with your charging/electrical issues. As for the knocking im not too sure. Haven't heard mine ever do that so really couldn't tell ya what to check for. What jeep98cherokee said sounds like some good places to start looking at though.
That's one of the main reasons i'm not a big fan of Mud holes and water. (Water and electrical don't mix) You always end up having problems. That's why I mostly wheel rocks.

My alternater just did it about 5 min away from my house and as for the oil pressure when im doing 55 it usually runs at 40 psi but now it runs about 35

May want to check the plug connection at your oil pressure sending unit. Or the sending unit sensor could be malfunctioning all together. May need a new one.
