Water pump/possible overheating question

So my Cherokee all of a sudden startEd leaking coolant Tuesday. I couldn't pinpoint the leak for sure until Tuesday when I drove it to work and parked and checked and I found that it was pouring from the water pump. What a sigh of relief I let out. When I was driving it after the leak started it wasn't overheating and never got to 210. So last night I replaced the water pump. That's all I replaced because I had done the belt a month b4 and I had never done a water pump so I didn't know other stuff to replace when I was at it. So anyways I drive it to work this morning and walla no more coolant leak. But now my thermostat is reading 210 straight up and down which it has never done b4 except when I'm offloading. It even started to go more towards the right side of the 210 than to the left but it stayed on the 210 hash. Is this normal or should I be concerned with it?

Could be air in the block. How's the coolant level in the overflow tank with a cold engine?
