Napa 195 been a year with no problems. Even transferred it to my new motor back in April. Why do you suspect your t-stat? How is the rest of the system?

That was my first impression the coolant looked clean and it hits a little over 210 on casual driving and I don't have too heavy of a right foot in the city

When was the last time you changed your clutch fan? Does it get hot enough to kick on the electric fan? When it's hot it should feel ilke a wind storm when you pop your hood if the clutch on your mechanical fan is working good.

A lower temp rated thermostat doesn't mean that the engine will run cooler.
It just means that the thermostat will "open" sooner (at the rated temp).
A 195 works best for the vast majority of stock 4.0 applications. Some guys have had a bit of luck with the 180. I would NOT recommend anything lower than a 180. There is no good reason to use that. I buy my stats from Jeep and also like the Stant SuperStat. Don't use an el-cheapo stat; you get what you pay for with stats!
You are okay up to 210. Check the actual coolant temperature with an infrared point and shoot thermometer pointed directly at the thermostat housing, as there can be a bit of inaccuracy between the sending unit and the gauge.
Be sure the rest of the cooling system is fresh. Radiator, water pump, serpentine belt tight, radiator cap, fan clutch, hoses.
