Default running a little rich?

I was driving my 87' Jeep Wagoneer ltd. home from the shop yesterday, and my friend was driving behind me, and he noticed some blue smoke when accelerating or when I let off the throttle. He also detected the smell of gas. After a short highway run, it stalled on me at a stop sign. I'm not sure how the fuel/air mixture could be adjusted but it does seem like it is running richer than it should be. I could be wrong though, has anybody experienced anything like this? This jeep did sit for awhile, and I recently upgraded the fuel injectors to 5.0 mustang ones.

You said it, the mustang injectors are bigger (flow rate), what you need now is a map sensor adjusting circuit:
http://www.angelfire.com/my/fan/MAP_adjuster.html
This will allow you to refine your air fuel mix.
Check also vacuum to map sensor and adjust your TPS.
