Would there be any benefits to replacing a perfectly good wheel bearing while I have everything else apart or should I just replace the seal and call it good?

I recommend to everyone who is converting to rear discs to do so. You may as well unless you have replaced them recently. Yukon bearings are $40 & it only takes about 15 per side to remove & reinstall. You will need to rent/ borrow a slide hammer.

If they are original, just change them since it will only take you an additional few minutes per side once you have the brakes torn down and the axles removed. Change the seal as well.
If they are high quality replacements, assess and lube if necessary (pretty sure the wheel bearings in a Chrysler 8.25 are not lubed by the gear oil)
