Default Overheating only while climbing.

I have replaced my entire cooling system, installed a transmission cooler and a vented hood. This overheating problem has happened 3 times in 2 years. While climbing, the gauge goes from 215, which seems to be its normal running temperature, to 250 in a split second. As soon as I get to the top, it immediately goes back to 215, in a matter of seconds. Could this be a vaccum problem? I have read other posts about vaccum leaks with regards to A/C switching to the defroster outlets and I have that same problem. (Climbing Only). Can anyone help me with this problem. Any advice???
Thank you.

I don't think it's possible for the engine to go from 215 to 250 in a split second. Bad sending unit of some kind would be my guess.

Mine's normal operating temperature is 210, and I've never seen it go farther than 210, even while climbing hills.

X2 on the sending unit its impossible for it to raise the temp that quick get a heat gun and check and make sure gauge ur gauge is right most shops will do this for little or no charge
