Well, at age 53, I have just changed out my first pair of shock absorbers!! Might not seem like much to some, but to me, I just climbed a small mountain!

Question...how much do I need to tighten down the top nut to compress the rubber bushings? I have about 3/4's of an inch of bolt above where the nut is screwed down to currently.

I tighten them till they start to bulge a bit then maybe a hair more and lock em down. As long as they are snug and not smooshed they will perform fine.
Oh and good job. Fixing your own heep is always rewarding.

Tighten the nut until the rubber bushing squishes out to the edge of the washer. If you over tightened it don't worry too much about it. There should have been instructions that came with your new shocks.
