Coolant temp or cluster problem?

Model: Cherokee
Engine: 4.0L
Coolant temp or cluster problem?
The temp used to sit one mark higher than this and sometimes( and I mean very rarely) reach 210* before I replaced the radiator 3 weeks ago.
Now, its sits right here all the time and will maybe go up around the next hash mark Even sitting in traffic with the A/C on and atmospheric around 100*. For the most part though, even driving on the freeway, it stays around this mark.
It just seems really low based on everything I read on these forums. It always runs like a champ.
I'm not complaining though, and I hope everything is accurate. But if its a false reading, I would like to know what the temp really is.
I just purchased it about a month ago and what I do know for sure is that the fan clutch works great, My electric fan works great, all shrouds are in place and it has a new radiator.

It does seem low. I would want to take readings with a IR/touch-free thermometer to verify. Is it possible that your electric fan is always running? even when it shouldn't be?

This happened to me a few years back and it was the engine temperature sensor. If your heat still works that might be worth checking out.
Other symptoms were sluggishness at WOT and a no-start condition when the engine was warm. ECU was dumping too much fuel in for what the actual temperature was.
