Following up on kengofff's post.
For the hood, you could first try shock therapy. Have someone pull out on the hood release handle while you pound the top of the hood (with your fist) at the spots shown in the below pic. If you're lucky, the latches or bellcrank will free up and unlatch.
If it won't release you'll have to unbolt the hood latches/strikers like kengofff suggests.
Here's how:
See FSM directions below.
Remove the headlamp bezles, park lamps, headlamps, and the headlamp buckets (spring holds them in). You will have a small opening to access the Striker bolts. Pic below shows the bolts but not the access holes in the grill header.
Remove the two bolts on both sides. The strikers and latches will rise with the hood when you lift it and will need to be put bck in place, with shims, when you have resolved the problem.
These problems with hood release are caused by a lack of lubrication on a regular basis.
Here's some FSM R&R data:

Concerning the liftgate (hatch);
As you can see the liftgate wa intentionally designed so nobody can access the latch/lock mechanisim from the outside, and unintentionally designed so nobody could access it from the inside either.
Can you unlock the liftgate with a key or with a FOB?
If trying to unlock it, or unlatch it, in either way fails, the only thing I can think of to get at the latch/lock mehanism is by cutting away a portion of the center, bottom of the liftgate interior trim panel. When accessed, squirt down the mechanism with oil or silicone spray. Try the FOB or jkey again to see if it unlocks. Try unlatching it from the outside. Keep at it until you can. That is, of course, it isn't so ate up with rust it cannot work. Penetrating oil may work.
Get a replacement trim panel from a junk yard.
