Today I had time to yank the 4.0 and the 2wd AX-15 out of the red MJ. Gonna pull the gas tank, steering column, and probably the bench seat out.

A guy at NAXJA North Atlantic Chapter (the one im a member in) was trying to convince me to turn the MJ sorta into a "club vehicle" he said he ll try to get other guys to "donate" parts and have work parties building it up. I'm seriously considering that. That way when NAC have events or whatnot. The MJ can attend. Maybe shared during trail runs at rausch or something.

That sounds like a good option, man. It will always be in the Jeep community that way.

I also think I'm gonna pull the steering box along with PS pump just because it's 129k miles. It still look good.

Obviously I'm gonna replace the common gaskets (valve cover, oil pan, intake/exhaust manifold, etc) on the motor before shoving it under the primary MJ. Should I also replace the head gasket as well? Timing cover gasket?

If you do change the timing cover gasket, I would while it is open change the timing chain.
