I have a 2000 cherokee classic with a 3 inch Rusty's lift. What rims and tires would you recommend?

The round kind.
But seriously, we need more info than that to give any real help. I can say 15" wheels are plentiful and cheap. Certain TJ wheels are 15x8. For a 3" lift 31x10.50 tires are most common. You can stuff 33" with good backspacing (not sure what that would be) and some major fender trimming.
All terrain, mud terrain, that's up to you and your needs.

^X2^ a 15x8" wheel with a 3.75-4" of BS is what is needed and not any wider wheel if all you want is a 12:50 tire.

I ran the Cragar Soft Eights in 15x8 with 3.75BS and a 33x12:50x15 on my 99 with 3" lift the fenders trimmed also had 31x10:50 on for a while that was when I first trimmed the fenders.

My XJ is mostly for off road use and I run a MT tire.
