An adjustable resistor is a rheostat. They can be found at radio shack or some other electronics store. My thought would be if you can find the right one they are usually encapsulated in a metal housing with a **** and could be mounted in the engine bay near the relays from the harness.

I've been digging around and got my hands on a set of the Rigid Industries LED headlights (Reboxed TruckLites) earlier today. It says their specs are 46W and 5400K where as mine are 55W and 6000K. I was meaning to ask, Where the "cutoff" comes from? Is it thw reflector itself or a combination of output and reflector? No sham in saying, as much as I know about automotive, I know nothing about LEDs or lighting. My background is more mechanical than electrical.

Cutoff is a function of any projector or lense that the assembly would have overall, sometimes the shape of the lense on the diode, just like a regular halogen assembly.

Is that high beam or low beam? Sounds like yours are extra bright and centered at a really annoying point in the colour spectrum. Is lumen output listed? There should be two values for high vs low.

Considering the TruckLites are reflector based, vs projector based - the cutoff is pretty damn sharp
EDIT:
Just to be a post *****, here is what my Bixenon projector cutoff looks like;

Put in the new radiator cap. Temp still creeps up on the highway, but I was surprised how much of a difference it made. I checked the lower rad hose, and it isn't round when cold. No resistance when squeezing it, so I suspect I may have been right about it collapsing under load.

No, I don't lick fish.
Drove it out to Ft. McCoy yesterday to my grandfather's place to pick up a big home-made shop fan that my dad lent him. Dad said he wasn't going to drive the truck all the way down from Kentucky to pick it up and asked me if I wanted it... it's been near or over 100* here almost ever day so....yeah, I wanted it lol. So I emptied the trailer, hitched it up, picked up the fan and the cart it sits on and headed back.
